Bring In The New..But Keep The Old Favorites For Comfort

What brings you comfort? On this cold wintery day, nothing brings me comfort like the aroma that fills my house when I’m baking bread! It’s aromatherapy of the finest!! So today, it felt good to bake a batch of fresh multi-grain bread. I’ve been baking bread for years, my mother was my mentor, showing me the way to create rustic breads, and her father taught her. He, my grandfather, owned a bakery in Juneau Alaska, but he passed away before I was able to bake with him.  I will keep his tradition of baking yeast breads alive! Awww…I love the aroma of fresh baked bread.

My mother revised a simple, no-fail bread recipe for me, and I’m sharing it with you.  I have not altered this basic recipe…but I confess, sometimes I change the variety of flours, grains, and spices that I use. That’s the creative part that brings the fun into it! I might even add our Culinary Lavender, with cinnamon and raisins! Now I’m going to enjoy a slice, with a bit of butter on top 🙂 MMMmm… “Happy New Year”!!!

Simple No-Fail Bread                          (Using Large Kitchen Aid Mixer)

3 cups lukewarm (to touch) water

3 tablespoons honey

3 teaspoons yeast

3 cups flour, pour into above..

THEN 2 teaspoons salt

4 tablespoons oil

(options) 2 Tbs. culinary Lavender

2 Tbs. cinnamon & 1 cup raisins

BEAT – Five minutes

ADD 1 cup flour and mix slowly

ADD more flour to get stiff.

Pour into greased big bowl & cover with plastic wrap.

Let sit for two to six hours, depending upon what you are doing;

Can refrigerate overnight also. Knock down and divide into 2

Large, or 4 small bread tins. Let raise until curved above top of

Pan. (The loaves pictured have 1 1/2 c. sunflower seeds, 1 cup oatmeal

in the dough, and then I rolled each loaf in sesame seeds before baking)

BAKE at 350’ for 30 to 35 minutes.
